Vegan tartiflette toast with cheese, bacon and potatoes

Here is the recipe for baked bread slices with the vegan tartiflette that we posted yesterday on our Instagram account, result of an extreme lazy moment coupled with a big desire of FAT. I find that they really taste like tartiflette, but I prefer to warn you that having not eaten it for a decade so my opinion may be somewhat distorted.
The recipe is for about three toasts the size of those in the photo, for a person and a half. You are told in the recipe that you can put in addition to the cream, if you are afraid that it is too dry.

– 3 slices of bread
– 3 potatoes (2 for the toasts, one for the cheese)
– 1 shallot
– soy cream (optional)
For bacon :
– 1/3 smoked tofu taifun cut into bacon
– 1 tsp agave syrup
– 2 drops of liquid smoke
– 1 tsp cider vinegar
– 1 tsp soy sauce
– 1 tsp of olive oil
For reblochon cheese :
– the large baked potato
– 2 tablespoons of tapioca flour
– 1 tsp almond puree
– 2 tsp white sesame puree or tahin
– 2 tsp of nutritional yeast
– 1 tablespoon deodorized coconut oil (melted)
– beer (Leffe for us)
– water
Steam the potatoes.
Marinate the smoked tofu for 20 minutes in liquid smoke, agave syrup, vinegar, olive oil and soy sauce or longer if you can. Cook it during 5 minutes until the bacon is browned.
For the cheese, put a baked potato, tapioca flour, almond puree, than, deodorized coconut oil and malted yeast into the blender bowl. Add a little water and a little beer (half and half, I did not measure, but I will say 4 tablespoons each). Mix everything until smooth. Add salt and pepper. The texture must be smooth, but not liquid.
Then cut the two remaining potatoes into slices, and cut the shallots into strips. Arrange them on the slices of bread, add cream if you want, (you can also soak the potatoes in the cream before putting them on the bread). Add salt and pepper on the potatoes. Add the bacon. And add the cheese mixture over the whole.
Then put in the oven at 180°C about ten minutes (depending on whether you like the cheese rather browned or not). Add pepper and taste !
