Fluffy and easy vegan pancakes

 

The pancakes is our ideal breakfast of the weekend when we have a little motivation but we still want not to make too much effort. We can garnish them according to our desires and it is very comforting.
In this recipe, the dough is ready in 5 minutes, no need to rest it, you can directly start cooking.
This recipe is for about 7 pancakes, you can of course double the proportions if you are several, or if you are really really hungry.

R E C I P E

– 1 cup of vegetable milk (250 mL)
– 1 cup of wheat flour
– 2 tablespoons of whole sugar
– 2 small teaspoons of baking powder
– 1 large pinch of salt
– 1 tablespoon of oilseed puree (peanuts, hazelnuts, almonds …)
– 1 tbsp of oil

In a large container, combine vegetable milk, oilseed purée and oil.

Then add, flour, salt, sugar, and baking powder, mix with manual whisk (not the beater or the pancakes will swell less). Do not over mix so that air does not escape from the preparation, it does not matter if the dough contains lumps.
Oil and heat a small skillet over low heat. Pour a small ladle of the preparation into the frying pan, wait until bubbles form and the visible side begins to dry and then turn and lightly brown.
Once the pancakes are cooked you can top them with agave syrup, maple syrup, fruit, chocolate, nuts, or everything that makes you happy.
