I ate french toast almost everyday when I was little, but since I was vegan, I had hesitated to try to make it. Yet I was wrong because this vegan version is even better than the “traditional” version I remembered (but which really does not give me any more desire, milk, butter and egg, EURK).
And, as often with vegan cooking this version is much better from a nutritional point of view.
Here is the recipe with chia seeds. If you have a powerful shredder you can grind the chia seeds before soaking them. It brings nothing but the seeds will not be visible.
I N G R E D I E N T S
– 1 tbsp of chia seeds
– 1 cup of vegetable milk (soya for us)
– 1 vanilla pod (not whole eh but a little)
– 1 teaspoon of agave syrup
– 1 pinch of salt
– coconut oil (or other) for cooking
R E C I P E
Mix all the ingredients together and let the chia seeds act for 15 minutes. This is less than for a chia pudding because we only want the mixture to thicken a little.
Dip the bread slices into the mixture. If your bread is a bit saggy, well soak it so that it is fluffy at the end. Thoroughly surround the bread slices with the liquid.
In a hot pan, place a little coconut oil (or other) and brown the bread a couple of minutes on each side.
Top with maple syrup, hazelnut puree, chocolate chunks, and oatmeal. You can also add fruit, chocolate coulis, vegan butter, according to your desires … And eat the fabulous french toasts with a smoothie, you will not regret it !
